海虹是北方人的叫法,宁波人叫淡菜,宁波靠海,多贝壳类食物,在菜场里买到新鲜淡菜,肉质滑嫩,鲜美多汁,价格也亲民,我从小吃淡菜,我母亲一买一大锅,带壳吃或是取肉凉拌吃,非常地痛快淋漓!
最近几年,淡菜越来越小,已很难觅到肥美多汁的淡菜了,周末在超市买的淡菜,新鲜是新鲜的,就是肉质不厚,用一把菠菜做凉拌菜最适合,既有海鲜的美味,又有蔬菜的素雅,今天这个菜名据宁波人的叫法应该叫淡菜拌菠菜,但是挺拗口,就随了北方人,叫海虹拌菠菜吧。

主料:淡菜500克,菠菜1把300克
辅料:小葱1根,香菜1根(可省),姜2片,蒜2瓣,生抽30毫升,老干妈(或辣椒油)1小勺(5毫升),香油2毫升

淡菜洗净放在锅里煮开后见开壳即可关火

等稍凉,去壳取肉,剪去足须(足须必须剪去,不然影响口感)。

菠菜洗净剪去根部,切成长段(7厘米左右),烧开一锅水,入菠菜段烫熟至变软颜色变深,即可捞出

另准备一大碗凉开水,浸入凉开水里过凉

捞起挤干净水份(水份不挤干,拌起来会出水)。
